第4弾はトルコの定番サラダ チョバンサラタスÇoban Salatası
羊飼いのサラダを作ります。
羊飼いが手元にある野菜を刻んで作ったサラダと言われています。
トマト、キュウリ、玉ねぎ、ピーマン、パセリ、
味付けはレモン汁、塩胡椒そしてオリーブオイルだけ
このサラダはトルコだけでなく中東全土で人気です。
エジプトではエジプシャンサラダ、レバノンではレバニーズサラダと呼ばれます。
羊飼いのサラダ チョバンサラタス
【材料：2人分】
完熟トマト：中２個または大1個
きゅうり：1本
紫玉ねぎ：1/2個
ピーマン：２個（青唐辛子や万願寺とうがらしでも可）
イタリアンパセリ：1～2枝（普通のパセリでも可）
レモン：１個
黒オリーブ：10個
塩：小さじ1/4
胡椒：少々
エクストラバージンオリーブオイル：大さじ３
【作り方】
①きゅうりはピーラーで縞状に皮をむき、1cmの角切り。紫玉ねぎ、ピーマンもヘタと皮を剥き1cmの角切り。トマトはヘタを取り、1cmの角切り。イタリアンパセリは粗みじん切りにする。レモンは半分に切り、レモン絞りで絞る。
②ボウルにきゅうり、紫玉ねぎ、ピーマン、トマト、オリーブを入れ、レモン汁、塩、胡椒、オリーブオイルを加えてよく混ぜる。冷蔵庫で少し冷やすと味がよく馴染む。
③皿に盛り、残しておいたイタリアンパセリで飾る。

Çoban Salatası, Turkish Shepherd’s Salad
A refreshing Turkish salad made with finely chopped vegetables, lemon juice, and olive oil.
Ingredients (Serves 2)
2 medium ripe tomatoes or 1 large tomato
1 cucumber
1/2 red onion
2 green peppers
(green chilies or mild Japanese peppers such as Manganji can also be used)
1–2 sprigs Italian parsley
(flat-leaf parsley; curly parsley can also be used)
1 lemon
10 black olives
1/4 tsp salt
black pepper to taste
3 tbsp extra-virgin olive oil
Instructions
- Using a peeler, remove the cucumber skin in stripes and dice into 1-cm cubes.
Dice the red onion and green peppers into 1-cm cubes as well.
Remove the stem from the tomato and dice into 1-cm cubes.
Roughly chop the Italian parsley.
Cut the lemon in half and squeeze out the juice with a lemon juicer. - In a bowl, combine the cucumber, red onion, green peppers, tomato, and olives.
Add the lemon juice, salt, black pepper, and olive oil, then mix well.
Chill briefly in the refrigerator to allow the flavors to meld. - Transfer to a serving plate and garnish with the remaining Italian parsley.
