Salmon Saute in Vine Leaves with Grape Sauce

Tonight, the main dish is Salmon Saute in Vine Leaves with Grape Sauce. I rolled Salmon with Brined Vine Leaves from istanbul. The sauce is made of Grape Juice, Red Wine, Pekmez (Grape Molasse), Cinnamon Sticks, Bay Leaves, scattered Seedless Black Grapes on it, and baked in the oven.
Fresh water fishes and Fruits combination, this is a very Ottoman style Cuisine.
メインは塩漬けの葡萄の葉で巻いた鮭のオーブン焼き。ソースはグレープジュース、赤ワイン、ペクメズ(葡萄を煮詰めた甘味料)、シナモンスティックと月桂樹の葉。そして種なしの葡萄をたっぷり散らしてからオーブンで焼く。
葡萄×5! 葡萄づくし! 鮭(鱒でも)と果物の組合せというのがとてもオスマン的なトルコ料理!
